Vegan Hash Recipe

2 Cups Organic Corn (I use frozen)

2 Sweet Potatoes, cut into thin fourths/cubes

2 Zuchinni, cut into fourths

1/2 Avocado, sliced

2 TBL Purple Onion, diced

2 Garlic Cloves, crushed

1/2 tsp Sea Salt or to your taste

Directions – warm the garlic/onions/salt over medium heat with a small amount of avocado oil or olive oil for 4 minutes, and then add in the corn, zucchini, sweet potatoes and cook until the sweet potatoes are soft. Serve with sliced avocado on top!
